Traceability - About the Region

Porfirio Gámez Rodríguez grew up in the midst of coffee production, from an early age he watched his grandfather and father work on the farm, he is the third family generation in dedicating himself to the cultivation of coffee, his grandfather began the tradition in the year 1930.


In 2014, he became a COMSA partner, and began to implement the organic agriculture with the support of COMSA, in addition, he began to work with the life proposal of the 5M, applying each of them according to the need of the soil and coffee plants, to have a sustainable and friendly production with the atmosphere.


With the practices he learned with his grandfather and father, in 1980, Porfirio Gámez Rodríguez, decided to implement all that knowledge and began to grow coffee, which has allowed him to develop the coffee process on his own farm, implementing benefits from growing coffee to pulping and drying. Porfirio is driven  to experiment in each harvest season, with the aim of improving the profile of the coffee.


Porfirio is accompanied by his wife and their children, who follow the tradition with the same passion, with the aim of producing quality coffee, the same that he learned from his grandfather and father.


At Finca El Encanto, environmentally friendly agricultural practices are carried out, In addition, it is diversifying with the planting of fruit trees.

Processing:This process is very short, and requires selecting the best grain ripe. Once the grain is collected, it is placed in the dryer under the sun, where the temperature is  controled so that drying is a slow process. In this process, the coffee is constantly moved to prevent the grain from developing fungus and damage the quality of the coffee.
